For us at Panificio Notaro, that scent is freshly baked bread: simple, authentic and full of flavour. Everything began more than fifty years ago in a small family bakery where tradition and passion have always gone hand in hand.
At the beginning, it was all about bread: bread made the old-fashioned way, with slow fermentation, carefully selected flours and techniques passed down from generation to generation. That bread is still at the heart of everything we do today, symbolising our approach and the care we put into every dough.
Over the years, production has grown, evolved and experimented. From the first loaves to soft focaccias, from traditional Salento specialties to more creative leavened products, every new recipe has become part of our story — a journey that combines innovation with deep roots.
And yet, despite the variety that now defines us, the spirit remains the same: true craftsmanship made of hands, time and passion.

This strong bond with our territory has never stopped us from looking beyond. Over the years we have started shipping our products throughout Italy, bringing a piece of our tradition to those who live far away but still crave the flavours of home.
Then there is conviviality — a value that has always meant a lot to us. For this reason, we also offer a catering service, bringing our products to celebrations, events and special moments. Because sharing good food is the simplest and most genuine form of joy.
